I can't read Japanese so, I don't know what exactly does it say.
But Ballet of Bullets makes more sense; and there is a japanese movie with that name.

Do you see the infobox picture on the BoB article? It CLEARLY says "Bullet of Bullets.", as in "the best of the best" kind of thing.
The Ballet of Ballets.
Just kidding.
I agree, Ballet of Bullets makes more sense, the translation of the light novel does use this phrase instead of Bullet of Bullets a couple times as well. Plus, It sounds like the announcer in episode 8 says Ballet of Bullets in accented english...
The name has always been in English in the book. But written with japanese letters, so it was a bit ambiguous. That said, the anime confirms; it's "Bullet of Bullets", and you can see it all over the signs..
Translation of English is another thing that ignore what it is given and overwrite what it like on top of it. And please see lmgtfy.com/?q=japanese+pronunciation for the pronunciation.
The probable Japanese pronunciation for "ballet" would be 「バレイ」 (barei) rather than 「バレット」 (baretto).
And the Light Novel translation by Yen Press has not reached Volume 8 (hasn't even reached Volume 2 for that matter). If you are referring to a fan or freelance translator, they have their own translations. However, according to the reference in Official Naming, the «Bullet of Bullets» has been written in English at least once in the novel.
Written at the beginning of volume 6 to be exact. And the only translations that use "ballet" are old PDFs which were made before volume 6.
Oh, and "ballet" is actually written as バレエ (Baree) in Japanese, according to jisho.
It's should say Ballet of Bullets, after the Gun Fu term.
Except that it's not based on some gun term or whatever. The author has specifically stated in a tweet that Bullet of Bullets is a reference to Namco's King of Kings game.
